A sweet, musty wine with characteristics that are absolutely unique for the Tuscan territory, created by a courageous choice in 1989, when the oenologist Nicolò d’Afflitto understood the peculiarities of the microclimate of the vineyards destined for this production.
The expertise gained with the “Pourriture Noble”, the first wine of the company’s production, has been consolidated in the results achieved through the experience of numerous harvests, each year seeking the most correct moment for the harvest, always using with skilful hands the proportion of the Sauvignon Gris, Sauvignon Blanc and Semillon vines.
Amber in colour, with a very fine and elegant bouquet ranging from citrus fruits to honey. The flavour has great intensity, a dense and velvety body with a long and sweet finish of saffron and honey and a sweetness well balanced by great freshness.
During the harvest, only the bunches or grapes affected by Botrytis Cinerea are selected one by one. As far as vinification is concerned, fermentation takes place in barriques (225 litres) for 30-45 days and refinement for 12 months in French oak barriques (225 litres); this is followed by a final minimum rest period of 18 months in the bottle.
The average production is 800-1,000 bottles only in the “botrytis” years.
